Wash one quart of spinach and throw into a dry kettle, add half cupful of water, shake and toss over the fire for about five minutes, cover the kettle and let cook for about five minutes more, drain, saving the water, chop the spinach very fine, press it thru a sieve and return it to the kettle with the water which you have saved, add one tablespoonful of grated onion, two tablespoonful of flour rubbed into two tablespoonful of butter, season with celery, salt and pepper; let it come to a boil and serve with puff balls.
